couscous with veggies (couscous Upma)

When shopping in local grocery i saw this tricolor Couscous. Not sure if its healthy or good etc. but i liked texture and color and bought it home.  I tried this upma. ,it turned out very well.  Not bland as oats upma.
Its easy to cook. For 1 cup of Couscous you need 1.5 cup of water. no need to stir while adding this to boiled water,this won't form lumps etc.
Add all veggies you want to and enjoy this as a light meal or breakfast or brunch.
2 cups couscous
chopped Vegetables: onion, green chillies, potato, carrot, ginger,
 I added one cup of frozen vegetables

Seasoning:
 1 tablespoon of ghee /sesame oil if you want to go vegan
Mustered seeds - 1tsp
Cumin seeds - 1tsp
Green chilles - 2or 3
urad dal -1 tsp
chana dal-2tsp
Peanuts -2 tsp
hing a pinch
turmeric -1/4 tsp


1. heat  oil in a skillet
2.add all the seasoning ingredients except hing.
3.when they start spluttering add hing &turmeric
4.now add green chillies ,ginger and fry for 1or 2 min
5.Add vegetables fry for 1 min
6. Add 3 cups of water  ,salt and bring it to boil.
7.add Couscous to this and stir in.
8.reduce the heat to medium and cook for 3 or 4 mins.
garnish with cilantro and serve with peanut chutney



 Variation : if you don't have any of the above seasoning ,then simply heat oil and add vegetables. and proceed to step 5.
