Spinach with ricotta cheese

Today its cold outside,so thought of eating something spicy. so here it is pulav with cheesy spinach.
all this prepared with-in 30 mins.


 I always buy spinach frozen and fresh  its more of a staple at my house. I add it to Dal or  chapati dough or to dosa batter etc .It cooks so fast so its like instant and  quick curry..

This one is a instant and quick gravy curry. Spinach with cheese  is a protein packed lunch.  This is also good way to make your kids eat greens.


This is my lunch box for the day.




Malai Palak (Spinach with cheese)


Spinach - 1 cup chopped ( i used frozen)
frozen Peas - 1/2 cup
onions-  1/2 cup finely  chopped
tomatoes - 1/2  cup finely chopped
ginger - 1tsp chopped
green chilles - 2 or 3 depending on your taste
oil - 1 tsp
Paneer - 1 cup grated ,i used ricotta cheese as i don't have paneer.
Vegans can use tofu
 jeera /cumin seeds -  1/2 tsp

how to proceed



1.Heat oil in a skillet ,add cumin seeds to that.
2.now add green chilles and ginger and fry for 1 min
3.Add onions and fry for 2 or 3 mins
4.add tomatoes and spinach for 2 mins .
5. Add  1/4 cup water, salt .
6.cover with a lid and cook in medium heat for sometime( till they are cooked)
7.using a masher mash it well (if not transfer this a food processor and pulse it few seconds)
8.add peas and  cheese(paneer /tofu/ricotta cheese) ,cook it covered for few mins.

garnish with cilantro. Serve with rice /roti /pulav
