Onion Tomato and capsicum Chutney

I prepare lunch  and breakfast in the mornings ,I don't prefer cereals ,see here why instant breakfasts.
and i have exactly 30 mins to prepare breakfast and lunch .

My morning breakfast dishes are

1.Adai
2.Pesarattu (moongdal dosa)
3.Plain dosa ,carrot dosa,spiinach dosa
4.Our all time favorite Idly  - i can eat this daily :)

So problem is to get some chutney to go with these . I hate to prepare same chutney daily.

so i try these vegetable chutneys as they can be used with rice along curry and as an accompaniment for Dosa.


so here is the recipe. This recipe can be used with any vegetables (except on starchy tubers). Adding tamarind


Onion Tomato and capsicum Chutney:

1 cup chopped capsicum (i used less than one,as i don't have much)
1/2 cup chopped onion
1/2 cup tomato
1 small key lime size tamarind


Base:
1 tsp oil/ghee
1tsp mustered seeds
1tsp fengreek seeds
1/2 tsp urad dal
1/2 tsp dhaniya /coriander seeds
green chilles to taste
hing a pinch

1.Heat oil in a skillet and add all the base ingredients except hing. Hing should be added at end once the seeds are roasted

2. remove this fromskillet ,transfer this to mixer/grinder jar  ,let oil remain in skillet . Grind this base,no need to add water.

3. Add those chopped vegetables to the skilletl

4.add salt and cover the skillet,keep on medium flame.
try mixing veggies in between ,take care not to burn the veggies.

5. once they are cooked,switch off the flame and let it cool.

6.Now transfer this to mixer/grinder/blender jar ,add soaked tamarind or tamarind paste and just give a pulse/blend it once.
take care not to grind to a paste as it would taste good if you have texture with bits .

adjust salt as per your taste.

 enjoy with dosa/idly or rice.
