Quick capsicum/Bell pepper Rice

This is a quick and yummy dish with leftover rice. I like these type of rice dishes as its one pot meal and it won't take much time to cook . i have only green pepper/capsicum. But you can add all colors to make it more colorful.






what you need:

Leftover rice - 2 cups 

1 cup chopped green peppers like strips

1 cup potatoes ( not added this ,as
 i don't have it handy)
1/2 cup onion finely chopped

handful of chopped cilantro

2 tsp of oil
note : you can add veggies like green peas, grated carrots etc

Masala :

peanuts - 3 tsp
corriander seeds - 1 tsp
coconut grated(fresh or processed ) - 1tsp
red pepper /red chilles - 3-5 (depending on your taste buds )
chopped garlic - 2 tsp
chopped ginger - 1 tsp
cashews - 1tsp(optional)


Dry roast all the above ingredients seperately. This is because all have different tolerance   to heat.
peanuts take more time and coconut takes like few seconds to burn.

grind it a powder. when you powder this you will get it moist and lump like. that's perfect!


process :

mix rice with that powder and keep aside.

in a wide pan  ,heat 1 tsp of oil or ghee add  onions

fry onions for 2 mins.

add chopped pepper and cover it with lid.

stir in between ,so that it won't burn.

if you are adding potatoes or other veggies ,cook them separately and add it

once veggies are tender ,mix well with  rice.

garnish with cilantro.

serve with a raita or just plan yogurt.
