Shahi paneer

Lunch time at office is like a potluck. . Its like a tasting session ,sharing recipes . I like to take lunch break instead of taking lunch at desk,of course  most of the times its lunch time meetings that prevent it.

According to a research - it turns out giving up your lunch break could actually diminish your productivity, causing you to end up putting in more hours in the long run, not to mention what it does for your health and well being
I got this recipe from my friend  Harry ,she got this for lunch.

Here is the recipe..

1 cup onions chopped
1 tsp ginger
1tsp garlic
1/2 cup cashew nuts
 tomatoes chopped
 2 tablespoons oil
1 teaspoon cumin seeds (jeera)
 pinch asafetida (hing)
1/4 teaspoon turmeric 
1/2 teaspoon red chili powder, adjust to taste
1 cup milk
1 teaspoon sugar
 1 teaspoon salt, adjust to taste
 1 teaspoon garam masala
 handful of cilantro 

Method
Slice paneer into 3/4 inch cubes. soak in water .Keep aside.
soak cashews in water or milk for 15 min

 
heat 1 tsp oil ,add chopped onions,ginger and garlic pieces.
fry till onions till they turn pink
Grind cashews with onions ,add little milk/water if needed . Keep aside.
 heat oil ,Add cumin seeds to the oil and as they crack, add asafetida and bay leaves. Stir for a few and add ground paste. add  Puree tomatoes, to this. add garam masala   ,salt ,sugar, turmeric, red chili powder

add milk. 

Cook the mixture, stirring occasionally for 2-3 minutes. It will start separating from the oil.
Add paneer ,discard the soaked water .
cover the pan. Simmer for a few minutes over medium-low heat, till gravy is slightly thick in consistency.   

 Remove from heat, add chopped cilantro. Mix gently, cover the pan 

 This can be served as side dish to Naan /pulav
