Sweet potatoes are highly nutritious and rich in beta carotene, vitamin c and vitamin B6. Well these are sweetish as the name sweet potato , but trust me these can taste better than normal potato too.
During my childhood , just a boiled sweet potato by my mom was a snack item as we return from our school in evenings.
In Andhra , There are many recipes one does with this sweet potato, especially sweet potato pulusu( similar to sambar) is very famous.

Sweet Potato Curry |
Ingredients:
- Sweet potato-2/3 large
- onions- 1/2 finely chopped
- Ginger- 1 small size-grated
- coriander leaves-bunch
- curry leaves-bunch
- coriander powder-1 tbsp
- green chillies-1/2
- mustard seeds- 1tbsp
- cumin seeds-1tbsp
- turmeric powder-1tbsp
- red chullies-1/2
- oil- 1tbsp
- salt-tbsp
Method:
- Cut the sweet potatoes into medium size chunks and pressure cook for about 2/3 whistles.
- Peel of the skin of potato and drain off if any water content.
- Grind ginger, green chilies, coriander leaves in a mixer grinder and keep it aside.
- In a pan , heat oil, add mustard seeds, cumin seeds,red chilies curry leaves, turmeric powder and allow them to crackle.
- Now add cooked sweet potato, blended ginger green chilly paste, salt, coriander powder and cook for about 5 minutes.
This goes well with hot rice and rotis too:)
